Veggie Stir Fry & Asian Kale Salad

Ok so here goes, the first blog I guess is always the most difficult!

The aim of this blog is simply provide any busy family member with ideas so that you can provide healthy nutritious meals to the family.

My aim is to keep it simple!

So let’s see how this all plays out!

Ingredients: Frozen organic garden peas, 3 organic spring onions, half a organic carrot (Diced), half a cauliflower and broccoli chopped up into small bits, half a cup of organic cashews, braggs liquid aminos (I use this stuff a lot – awesome), soy sauce (ran out of organic – the petrol station had some on the way home though!), 2 limes, half a cup of filter water, whole grain rice (1 cup), Coconut oil (Organic), my own home sprouted mung beans (super nutritious and really bulk out the meal).

Fry all the Carrots, Brocolli and Cauliflower for a few minutes with coconut oil (organic) in a ceramic non stick wok! Then add the Spring Onions and Mung beans! Don’t have the heat too high so you burn it all – drop the heat and take it easy!Add the cup of water – mix up – cover with a pan lid – or use my inventive method! Steam for about 5 mins! After that, a big glug of Soy Sauce (Tamari), another big glug of liquid aminos (Braggs), Salt ‘n’ Pepper and finally the juice of a lime – Mix it all up

Drain off the boiled rice and put on a plate in a fashion that best depicts your presentation skills (mine need work!)

Place your stir fry on the bed of rice!

Crush up some cashews to sprinkle heavily over meal!

Kale Salad – Super Quick & Super Easy:

Wash a load of Kale – Throw into a glass bowl

Dressing – Into a bowl throw in – Juice of 1 Lime, Glug of Sesame Oil, Miso Paste (2 Tablespoons – I use Organic Barley Miso), Glug of filter water, Glug of Tamari. Mix all that stuff together and pour over the Kale. I like to really rub the dressing into the Kale and let it sit for 5 mins, then serve up……Best salad going!
